Slow smoked whole hog – A catering favorite

A smoked whole hog will serve up to 125 guests, if you have more guests; we`ll bring more hogs!

Pig picking is a pleasure that only comes from a beautifully smoked whole hog!

We cook your whole hog in the style called “The Racing Position”, the presentation is half the meal, after all we do eat with our eyes first!

Collard Greens

Fresh (never canned) Collards

Fresh collard greens are cooked with spices, hot sauce, garlic and pulled pork. Collards are pork flavored not vinegar flavored and always fresh, not canned or frozen. Pulled from the stem and torn into sensible size pieces, not chopped into tiny chunks, to better retain their flavor and absorb the added spices.

Add more hot sauce to taste!

Premium pork butts, lightly seasoned and slow cooked in the smoker then pulled apart.

Tender and moist and ready for one of our special recipe, sweet or hot sauces.

The real deal – fresh potato (no instant here!)

Made from scratch – baked by us and mixed with sour cream, cheese, butter and real bacon.

Rich and delicious – lightly seasoned with our house rub and a touch of smoke.

Presented here at our restaurant as a 2 meat, 2 side platter with ribs, pulled pork and bacon mac.

And bread and butter pickles.

A twice baked, loaded potato without the skin.

Ribs

Slow smoked spare ribs

ribs-brisket-pork-slaw-mac-collardsOur pork spareribs are “slow cooked” to give you a super tasty, super tender, “fall off the bone” delicacy.

Lightly seasoned with our own dry rub seasoning, hardwood smoked and lightly glazed with our house recipe, sweet bbq sauce.

Top them off with more of our sweet sauce, mustard infused sauce or our special blend, tangy, hot sauce. Or mix to create your own custom blend.

Yummy!

Our spare ribs are marinated in a dry rub then smoked, low and slow. The sauce is added near the end and sizzled on.  A complex spice rub, an elegant hardwood smoke and a just a touch of our special recipe, tangy sweet sauce!
